Our History


Malcolm and Coralie Day started Hahndorf Knife Shop as The Cutler’s Cottage in July, 1999. On a visit to Hahndorf for lunch and finding this tiny pioneer cottage available for lease it took them on the journey of starting the business. In August 2010, Lyn took her cheap kitchen knives to be sharpened and on picking the knives up the next day, observed the ‘For Sale’ sign (hand made of course!), Lyn and Malcolm started chatting. She had no idea that knifemaking existed as a craft, but what she did recognise was the uniqueness of the business, and there was a strong feeling that this would ‘match’ with her son Nathans unique creativity. They visited the shop the next day and it was all full steam ahead from there. Nathan finished the year out at University, and Lyn resigned from her new job. With no formal business background but lots of determination and enthusiasm, the ownership of The Cutler’s Cottage changed hands in early November 2010 after doing a ‘crash’ course with Malcolm and Coralie. It was amazing how everyone worked together in the tiny space, but there was a real sense that this small business was just waiting for Nathan. It was with much relief for the many customers who collect knives and the professional chefs who were keen to have someone skilfully sharpen their knives into the future and that The Cutler’s Cottage continued on as Malcolm and Coralie had hoped.

Over the following years Nathan and Lyn have developed the business into a very focused knife shop. They have grown the commercial range of brands significantly with regular stock as well as speciality ranges. Whilst Lyn is essential to maintaining the day to day administration and shop requirements, including ordering and importing, Nathan is the reason the shop can continue on in the unique craft of knife making.  As there was no room to do the 'hot work' at Hahndorf, the offsite workshop was essential for Nathan to expand his range. It is exciting to see what he will create next and who will love the craftsmanship. His focus is now on forging chef knives with many wanting the opportunity to use one of his creations. Nathan still continues to faithfully sharpen customers blades but his creative time has become very precious and this is where he really loves to spend his time when he can. We are now in a new phase with rebranding to Hahndorf Knife Shop in January 2018 underway and many more exciting adventures planned.
